Ingredients

  • 2 eggs
  • 1 cube butter (8 tablespoons), plus more for greasing the pans
  • 1 cup milk
  • 1/3 c sugar
  • 1 tsp salt
  • 1tsp baking soda
  • 4 c all purpose flour
  • 2 TBS instant yeast
  • 2 Tablespoons Butter

Instructions

  1. Prep the Pans: Grease 2 standard loaf pans with approximately 1 tablespoon of butter each.
  2. Mix Dry Ingredients: In a big bowl, combine 1 cup flour, sugar, salt, baking soda and yeast.
  3. Warm Buttermilk Mix: In a small pan, warm buttermilk and butter until it's melted and warm to the touch (around 130°F).
  4. Combine Wet and Dry: Add the warm buttermilk mix to the dry ingredients. Mix well.
  5. Add Eggs: Mix in the egg and beat for 1 more minute.
  6. Add Remaining Flour: Add remaining cups of flour. Keep mixing for 5 minutes. If using a hand mixer, scrape the dough off the beaters as needed.
  7. Knead Slightly: Place dough on a wet board. Wet your hands and knead briefly, it's a bit sticky.
  8. Let Rise: Let the dough rise in a covered bowl for about 25-35 minutes or until 1.5 times it's size. Then separate dough into two balls.
  9. Place in Pan: Shape dough balls into loaf sizes. Put the dough in the greased loaf pans.
  10. Let it Rise: Cover loosely with a clean towel. Let it rise in a warm spot for about 1.5 hour, or until it's to the top of the loaf pan.
  11. Preheat Oven: Meanwhile, preheat the oven to 350ºF .
  12. Brush with Butter: Melt the remaining 2TBS butter and brush it over the loaf.
  13. Baking Time: Bake in the center of the oven for around 25 minutes, until the top is lightly browned and firm.
  14. Cooling: Let the bread cool in the pan on a wire rack for 10 minutes.
  15. Final Cooling: Take the bread out of the pan and let it cool completely on the rack before slicing.
