Substitutions

  • Tahini: If you do not want to use tahini for whatever reason, you can of course replace it. Instead of tahini, you can use other nut butters, such as cashew or almond.
  • Carrots: I love to use whole carrots. What kind of carrots should you use for this recipe? You can also use baby carrots or cut the carrots. Those will be ready quicker. Add some more color to your holiday table and use multicolored carrots, like rainbow carrots.
  • Maple Syrup: We use pure maple syrup, you can also use date syrup or other syrup of your choice. No need for brown sugar.
  • Seasoning: I love the seasoning in the recipe. Of course, you can always adjust the seasoning to your own taste.
  • Fresh Herbs: You can easily use fresh thyme to season the roasted carrots.

Variations

  • Spicy: To add a hint of heat to your maple glazed carrots, just sprinkle a little bit of red pepper flakes, cayenne pepper or chili powder over the carrots.
  • Smoky: You would like to have smoky root vegetables, add some smoked paprika powder or liquid smoke to your oil-free maple carrots.
  • Beets: Mix beets with carrots and coat them in this maple glaze. The beets will add a nice earthy flavor.

Instruction

Carefully wash the carrots, so you do not have to peel the carrots. Now look for a sufficiently large pan or baking sheet that fits in the oven.

Preheat the oven to 420 F (200 C) and prepare the glaze. To do this, you mix all the ingredients for the glaze and season to your own taste buds. Carefully coat the carrots.

Now put the carrots, garlic cloves and fresh thyme on the baking sheet or pan lined with parchment paper and bake the carrots until tender. This can take about 30–40 minutes. For this, I usually pierce the thickest part of the carrot with a knife to see if it goes through easily, the carrots are done. I usually start checking after 25 minutes.

Transfer the roasted carrots to a serving platter. I love the caramelized edges.

Hint: When you use larger carrots, you will need to roast the carrots a little longer to get tender carrots. The cooking time will vary depends on the thickness of the carrots.

Storage

Store leftover roasted carrots in an airtight container in the fridge for about 4-5 days.

You can also freeze the carrots if you want. That's up to you. Just reheat the carrots in the oven.

Tahini maple - glazed carrots - This great veggie side dish will completely satisfy your guests. The sweet maple syrup harmonizes perfectly with the sweetish carrots that you do not even have to peel or cut. These vegan and oil-free Tahini maple-glazed carrots are prepared in no time and will be the eye-catcher at your Thanksgiving or Christmas dinner. You can serve these to your guests as a gluten-free side dish without having much work in the kitchen.

Ingredients

  • 16 ounces carrots

Glaze

  • 1 tablespoon tahini
  • 1 tablespoon water
  • 1tsp lemon juice (fresh)
  • 2 tablespoon maple syrup
  • Sea salt and ground black pepper, to taste
  • Ground nutmeg and cinnamon to taste
  • ½ teaspoon thyme
  • a pinch cardamom
  • parsley or other herb for garnish (opt)
