Homemade Pretzel Bites - Step-by-Step Instructions

Even if you're not a baker, you'll be able to make this recipe at home. Follow these easy steps or scroll down to the video.

First, mix yeast, water and a pinch of sugar together in a glass bowl. Let the mixture sit for about 10 minutes or until it looks creamy when stirred. Use instant or active dry yeast.

While the yeast mixture is doing its magic, mix together flour, salt, sugar and canola oil in another bowl.

Note: Use whole wheat pastry flour or white whole wheat flour to make a healthier version of this recipe.

Add the yeast mixture to the dough mixture and knead until it is well-combined. This shouldn't be a lengthy process. Just make sure it's well-combined.

Did you do a double-take at the size? It's a very small amount of dough at this point (unless you've doubled the recipe.)

Put the dough in a bowl coated in cooking spray and cover it with plastic wrap or a damp towel. Place the bowl in a warm place, such as a sunny porch. Allow the dough to just about double in size which should take about 1 hour.

The same way you make playdough into long "snakes," roll the dough into long strips that are about ½ inch thick. At this point, you could form the dough into a traditional pretzel. This recipe will make about 6 full-size pretzels.

Otherwise, use a pizza cutter to cut the dough into ½ to 1-inch bite-sized pieces.

Next, the pretzel dough needs to be dipped into a mixture of hot water and baking soda to get its signature pretzel flavor.

Rather than boiling a pot of water, just heat the water for about 1 ½ minutes in the microwave, until it is very hot. Add baking sodato the hot water and carefully mix.

Use a slotted spoon to dip the pizza bites into the baking sodaand water mixture and then transfer each piece of dough to a baking sheet lined with parchment paper.

Sprinkle coarse salt on top of the soft pretzel bites, if desired. You could also brush with butter too.

Bake the pretzel bites in a 425°F oven for about 7 minutes or until they are lightly browned.

How to Make Raspberry Honey Mustard Sauce

The sauce we drizzled on top of our homemade pretzels is quick and easy to make. Just combine spicy brown mustard, honey, raspberry preserves and mustard seed in a small bowl.

Not a fan of raspberry? Use the same recipe proportions with another flavor such as blackberry!

Other Dipping Sauces

Fruity mustard sauce is just one option. Others topping for homemade pretzel bites include:

  • Sugar glaze (combine about ⅓ cup confectioner's sugar with a teaspoon of water)
  • Brownie Batter Dessert Hummus
  • Warmed Chocolate or Nutella
  • Honey Mustard Sauce
  • Easy Beer Cheese Dipby Cook the Story

How to Make-Ahead and Freeze

I am very happy to report that these little gems can absolutely be made ahead of time and frozen. (As you may know, this is my sometimes successful strategy for portion control and a way to ensure some good snacks are around when I need them.)

To freeze the soft pretzel bites, you've got two options:

  1. Prepare the recipe up to the point where you would cook the pretzel bites. Instead of baking, freeze them on a baking sheet and then transfer to a resealable plastic bag. Defrost and cook according to directions.
  2. Make them, cook them, and freeze them, if you have any left!

FAQs

What is the secret ingredient which makes a pretzel taste like a pretzel? ›

Lye. The dough is simple; take a basic yeast-risen dough that can be readied in an afternoon. But the trick to great pretzels is dipping the pretzels in a liquid wash before baking — and not just any wash, but a combination of water and lye. That's what gives pretzels their terrific color, texture and flavor.

How to get salt to stick to pretzel bites? ›

A: Simple. Wet your fingers and moisten the surface of the pretzel. Sprinkle salt immediately and it will stick. I put mine in a 375 degree oven for 6 to 8 minutes.

How do you make pretzel bites soft again? ›

If they harden, you can reheat them in the microwave for about 30 seconds to make them soft and warm again. Freezer Storage: Make sure the pretzel bites are fully cooled, then store in an airtight container or bag in the freezer for up to 3 months.

Should you use bread flour for pretzels? ›

Bread flour provides more structure

Gluten helps provide structure, allowing a baked good to have more body and sturdiness. As a result, bread flour will make it easier for a pretzel to hold its shape. This can be an advantage to beginner bakers, especially since the shape of a pretzel is so important.

What is the lie for making pretzels? ›

Dipping the dough in a lye solution gives traditional German pretzels their characteristic salinity; chew; and smooth mahogany exterior, but the strong alkali (sodium hydroxide) is corrosive and can burn your skin, so it must be handled with caution.

Can you use regular salt instead of pretzel salt? ›

We don't recommend table salt, as this is usually too fine for pretzels.

Do you put salt on pretzels before or after baking? ›

Pretzel salt – This is for sprinkling on the pretzels before baking. I'd highly recommend ordering the pretzel salt for the most impressive pretzels possible and best flavor. If that's not an option, use coarse sea salt instead. Just note it'll dissolve into the dough more.

What do you spray on pretzels to make the salt stick? ›

Baking soda solution adheres salt to pretzel

Eat. Repeat. recommends dipping pretzel bites (or twists) in a solution of baking soda and water prior to baking them. Kitchn likewise suggests a baking soda solution, as it replaces the traditional lye.

How to store homemade pretzel bites? ›

Let pretzel bites cool completely. Place them on a baking sheet so they are not touching and freeze until solid, about 1 hour (this flash freezing prevents them from sticking to each other). Place in a large freezer bag or smaller plastic bags for individual servings. Freeze for up to 3 months.

What are pretzel bites made of? ›

Dough for Soft Pretzel Bites

You need just 6 basic ingredients to get started including warm water, yeast, a little sugar to feed the yeast, melted butter, salt, and all-purpose flour. (If you have it, the same amount of bread flour works too!). You can use either instant (quick rise) or active dry yeast in this dough.

Why did my pretzels come out hard? ›

Soft pretzels can usually be baked in 15 minutes; hard pretzels, meanwhile, must be baked for up to an hour. The longer baking time further dries out the pretzel. And, as we have discussed, the lack of moisture is what gives the hard pretzel its brittle texture.

Do you put baking soda or baking powder in pretzels? ›

As noted above, baking soda is a staple ingredient for making homemade pretzels. Dunking your pretzels in a baking soda bath prior to baking is what enables them to develop their distinctive color and crispy-on-the-outside, chewy-on-the-inside texture.

Why do you boil pretzels before baking? ›

This bath essentially gelatinizes the outside of the pretzel, preventing it from fully “springing” during baking (as bread does) and giving pretzels their signature chewy crust. It also gives them their unique and indelible “pretzel” flavor.

What gives pretzel dough its flavor? ›

Yeast – Use instant yeast (or rapid rise yeast), not active dry yeast. Brown Sugar – Brown sugar helps give the classic flavor to our pretzel dough, and provides sugar for the yeast to feed on. Do not omit this! Salt – Salt provides flavor!

What gives pretzels their unique taste? ›

What Gives Pretzels Their Pretzel Flavor? You have baking soda to thank for that distinct pretzel flavor. Baking soda is highly alkaline and imparts that subtly metallic taste onto the dough before your pretzels go into the oven. Some recipes call for a lye bath, which does the same thing.

What makes a pretzel bun taste like a pretzel? ›

Lye-dipped pretzels, or in this case, pretzel buns, have a distinctive flavour that is both savoury and slightly bitter. The lye, a strong alkaline solution, is used to give the pretzels their characteristic dark brown colour and chewy exterior.

Why does pretzel dough taste different? ›

They're Boiled, Not Baked.

The dough is first shaped into a long rope and then boiled in water before being baked at a higher temperature than bread. This process creates a distinctive pretzel shape and gives them their unique taste.

What is unique about pretzel dough? ›

Soft pretzels are just a yeast bread is that formed into a pretzel shape. The one big difference in pretzel making, as opposed to a regular bread, is that pretzels are boiled and then baked. It is the boiling that gives the outside of the pretzel its beautiful golden brown color and uniquely crisp and chewy texture.
