    Hi Aarthi,

I have tried your eggless christmas cake and dates cake with good results and today I tried your eggless orange cake. It tastes fantastic but it sunk in the middle while baking and got burnt and stuck at the bottom. I had to scoop out the cake with a spoon. The only change that I had made was to switch milk with water. Also, I only baked it for 30 minutes because it was already looking runt. It was cooked though. Your oven times have worked for me before so I am not sure what went wrong. I intend repeating this recipe with milk but do you have any ides about what could have happened? Thanks.

@Anonymous I think adding water must been the mistake. Because milk has some fat content in it and water dont have that. So use milk next time and let me know how it turned out.

      Hi Arthi,
I tried this recipe with milk, but had the same problem, flat in the middle, almost burnt in 30 min. Also could you suggest the pan size, I used a 4*4.
Will love to try it again.

@Nisha Ganesh I think you must have baked longer. Try reducing the cooking time.

    Hi Aarti,

I have tried many of your recipes & it has come out well. Thanks a lot for posting such good recipes. Last week for the first time I baked cup cakes. It came out well. I used the silicon moulds. I have a small doubt. The baking tray which I bought is a bit bigger size. So if I keep that tray in my micro wave , therez no space for rotation. So this time while baking kept only the moulds. Just wanted to know will there be a problem if the tray don't rotate? How can I use the tray?

    Reply

  13. Aarthi

@Rajani MenonIf you are using microwave then the rotating motion will make it cook evenly. But if your cake is cooked properly then it wont be a problem i think. But i would suggest you to invest in another pan which fits your microwave so it is safe to use.

Tried today and tasted really good. But the cake got sticked to the pan so I couldn't invert the whole cake. I coated the pan with flour after oil. Is that a problem? Or the butter was not mixed well small lumps were there... May be that caused the issue? Couldn't slice the cake. Pls tell me a solution I am planning to try this out for my husband's office party this Friday coz I love the taste...

Forgot to say this... My cake got baked in 25min in 360 deg f preheated... Should it be stay longer as u said for 40min to get the whole cake without disaster?

    Reply

  28. Aarthi

@Breeze Pthis cake will be like a sticky and pudding like cake. I think the flour is not mixed in properly so it had formed small lumps. You can sieve the flour well before adding into the cake batter. nd if your cake is done in 25 mins and if you are sure about it, then you dont over bake.

  29. Breeze P

Thanks for ur response. I couldn't make it with no lumps..butter is not getting mashed. Can we do it in a mixer blender?

    Reply

  30. Aarthi

@Breeze Pthe butter has to be at room temp, then only it will mash properly

FAQs

Why does pudding make cakes moist? ›

Sprinkling the instant pudding powder in with the rest of your dry ingredients will level up the flavor, texture, and moistness of your boxed cake. Thanks to the added fat in boxed pudding powder, your cake can be just about as decadent as if you'd made the thing from scratch — but without the extra time and hassle!

What does pudding do in baking? ›

Instant pudding mixes are a blend of sugar, cornstarch, and flavorings that improve the texture of baked goods. The sugar in the mix helps retain moisture, which is why it's a popular addition to cake batters.

Why is my cake pudding? ›

Insufficient creaming of sugar and eggs will also make a tight texture because there isn't enough air trapped in the mix to give it a lift. Adding too much liquid will make it dense and pudding like.

What happens when you add instant pudding to cake mix? ›

Add Instant Pudding

You'll want a similar pudding flavor. For example, use chocolate pudding for a chocolate cake mix. Then, add the wet ingredients and bake the cake as directed. It'll be so moist and the pudding will give it a big flavor boost.

What does adding pudding mix to cake batter do? ›

Put some pudding in the mix: Add a small box of pudding mix in with the cake mix. (Don't make the pudding.) The mix adds additional flavor, moistness, and a denser texture.

What to substitute for pudding mix in a cake? ›

The alternative mix is simply 1 part cornstarch to 2 parts fine sugar, plus 1 part vanilla. I used 1 TBSP. of cornstarch and 2 TBSP. of sugar.

What can I add to pudding to make it better? ›

Sprinkle in chopped nuts, chocolate chips or baking spices like cinnamon or freshly grated nutmeg. Don't be surprised if folks go back for seconds! And you can always top with sprinkles, too. They make everything more fun!

What are the 3 types of pudding? ›

Baked, steamed, and boiled puddings

These puddings are baked, steamed, or boiled. Depending on its ingredients, such a pudding may be served as a part of the main course or as a dessert. Steamed pies consisting of a filling completely enclosed by suet pastry are also known as puddings.

How do you thicken pudding for cake filling? ›

Your best bet would be to mix a tablespoon of cornstarch and a teaspoon of sugar with some of the beverage and add it to the warm pudding. Heat it to a bubble and stir until it thickens.

What is cake pudding? ›

'Pudding' in British English does not mean or imply 'cake'. 'Pudding' is what we call the sweet course following a main meal - what is more commonly known elsewhere in the Anglosphere as 'dessert'. This may encompass cake, but it is more normal to eat cake separately (with tea or coffee).

What makes a cake heavy? ›

Six common baking-fails, and how they can be prevented. Your cake is too dense A cake that is overly dense typically has too much liquid, too much sugar or too little leavening (not excess flour, as is commonly thought).

Which is better, baking soda or baking powder? ›

The leavening power of baking soda is about three to four times stronger than baking powder. This means that you need a lot less baking soda in your recipes. If a recipe calls for baking soda and you only have baking powder, you need to use the right baking soda to baking powder conversion.
