Soak 1 tbsp tamarind in ¼ cup hot water for 10-20 minutes

Put ⅓ cup mint leaves in a blender with soaked tamarind and its water. Do not use the mint stems as this can add a bitter taste.

Add 1 tsp fennel, 1.5 tsp cumin seeds, 1 black cardamom (seeds removed) and ½ tsp black pepper.

Then put 1 tsp chaat masala, 1 tsp mango powder (amchur), 1 pinch asafoetida (hing) and black salt as needed. You can also add lemon juice if you don’t have mango powder. Sea salt or rock salt can also be used in place of black salt.

Grind in a smooth paste. Do not add any extra water. You can also strain the chutney in a tea strainer.

Take 2 tbsp on jaljeera chutney in a glass and fill it with chilled water. You can also put in 2 ice cubes per glass of jaljeera. Mix well and check if you want to add extra salt, chaat masala or lemon juice to balance the taste.

Top it with 1 tbsp boondi before serving. Your tangy and refreshing jaljeera is ready!
